Rich honey and sugar form the base for these Swiss spiced biscuits, studded with almonds and candied citrus peel. A hint of Kirsch and a delicate powdered sugar glaze complete these chewy, flavorful treats.



Serves:

a sheet cut into small rectangles

Ingredients

375g Honey

175g Sugar

250g Sliced Almonds (Mandelstifte)

1 pinch Cardamom

1 pinch Cloves

1 pinch Cinnamon

1 pinch Nutmeg

1 pinch Coriander

50g Candied Lemon Peel (Zitronat), finely chopped

50g Candied Orange Peel (Orangeat), finely chopped

2 tbsp Kirsch (Cherry Brandy)

375g All-purpose Flour

100g Powdered Sugar

2 tbsp Water

 

 

Instructions

In a pot, heat the honey and sugar together, stirring constantly until the sugar is dissolved. Add the remaining dough ingredients (almonds, spices, candied peels, and Kirsch) and mix well.

While the dough is still warm, roll it out onto a greased and floured baking sheet to a thickness of approximately 1 cm (just under half an inch). Bake at 180°C (350°F) for 20 to 25 minutes.

While the sheet is still hot from the oven, whisk the powdered sugar and water together to create a glaze and brush it over the top.

While still warm and the glaze is setting, immediately cut the sheet into small rectangles.
