Try this cake. It's so wonderfully delicious!
3/4 cup olive oil
1/2 cup brown sugar
4 eggs, beaten
1 cup whole wheat flour, I use spelt flour
2 teaspoons baking powder
1 nectarine, sliced thinly
1 pluot, sliced thinly (or another plum)
1/2 cup grapes
1/2 cup walnuts, chopped
For the sirup:
1/2 cup water
1/4 cup brown sugar
3 tablespoons lemon juice
1. Preheat oven to 375 F
2. Mix all the ingredients and mix well.
3. Pour mixture into a greased baking dish.
4. Bake cake for 40 - 50 minutes or until a inserted knife comes out clean.
For the sirup:
1. In a small pan bring water and sugar to a boil. Then take away from stove and add lemon juice.
2. Pour over the cake as soon as you take it out of the oven.
Let cake cool for 5 - 10 minutes and then take out of the baking dish. Let cool completely before serving.
